This artisanal pasta is produced by Pastificio Giuseppe Cocco in Abruzzo, Italy, using durum wheat semolina, bronze-die extrusion, and slow drying. Zita tagliata are long, smooth tubes (similar to ziti) that are cut into shorter lengths. Traditionally used in Southern Italy, especially in baked pasta dishes, their hollow center and smooth surface make them excellent for absorbing sauces when baked with cheese, tomato, or meat ragù. As part of the “Special Cut” line, this pasta showcases traditional, region-specific formats.
