This pasta is made by Mancini using durum wheat semolina grown on their family farm in the Marche region. Maccheroni are short, hollow pasta tubes, slightly curved and thicker than penne, with smooth or lightly ridged surfaces depending on the batch. They are a versatile shape, excellent for baked dishes, creamy cheese sauces, meat ragùs, or vegetable-based recipes. Mancini extrudes its pasta through bronze dies and slow-dries it at low temperatures, giving the pasta a porous surface that holds sauce beautifully.
