This pasta is handmade in Abruzzo, Italy, by Pastificio Giuseppe Cocco using durum wheat semolina, bronze-die extrusion, and slow air-drying. Mafalda (also called reginette, meaning “little queens”) are long, ribbon-like pasta strips with ruffled edges, resembling miniature lasagna sheets. Their decorative, frilly edges help trap sauces, making them ideal for creamy sauces, meat ragùs, or baked pasta dishes. They add both texture and elegance to any dish.
