This pasta is produced by Mancini using durum wheat semolina grown on their own farm in the Marche region of Italy. Mezzi paccheri are large, wide tubes, essentially a shorter version of the traditional paccheri. Their generous size and hollow shape make them perfect for capturing chunky sauces, seafood ragùs, creamy cheese fillings, or even for baking stuffed. Bronze-die extrusion and slow, low-temperature drying give them a rustic texture and firm bite, elevating them above standard large-tube pastas.
