Perlato Italian Farro

Prometeo

This ancient grain is produced by Prometeo, a specialist in traditional farro from the Umbria–Marche region of Italy. Perlato (pearled) farro has had part of the bran polished off, which shortens cooking time while preserving much of its nutty flavor and chewy texture. It is highly versatile, often used in soups, salads, grain bowls, or as a base for risotto-style dishes (farrotto). Compared to modern wheat, farro is richer in protein, fiber, and minerals.
