Mancini

This pasta is made from durum wheat semolina grown directly on Mancini’s farms in the Marche region of Italy. Mezze maniche means “half sleeves” — short, wide tubes that are a bit shorter than rigatoni but larger than penne. Their hollow center and broad surface area make them perfect for catching thick, hearty sauces, from meaty ragùs to creamy cheese-based dishes. Bronze-die extrusion and slow drying give them a rustic texture and excellent sauce absorption.
