This pasta is crafted by Mancini with durum wheat semolina grown on their family farm in the Marche region of Italy. Pennette are a smaller, slimmer version of penne rigate — short, diagonally cut tubes with ridges along the surface. Their compact size makes them ideal for lighter sauces, baked dishes, and pasta salads, while still providing the same sauce-gripping benefits as larger penne. Produced with bronze-die extrusion and slow drying, they have a rustic surface and firm bite.
