This pasta is made from grano turanico (Turanici wheat), an ancient grain closely related to durum, cultivated by Mancini on their farms in the Marche region. It has a naturally nutty, slightly sweet flavor and a golden hue that distinguishes it from classic durum spaghetti. Spaghetti turanici are long, thin strands with a firm bite, ideal for pairing with olive oil–based sauces, seafood, or tomato classics like amatriciana and carbonara. Bronze-die extrusion and slow drying enhance the rustic texture and allow sauces to cling beautifully.
