This artisanal pasta is made by Mancini using durum wheat semolina grown directly on their family farm in the Marche region. Calamarata are thick, wide rings of pasta shaped to resemble slices of calamari (squid). Thanks to their hollow, tubular form, they’re excellent at catching chunky seafood sauces, vegetable ragùs, or creamy preparations. Traditionally popular in Campania, calamarata is often paired with calamari and shellfish for a sea-inspired dish. Mancini’s bronze-die extrusion and slow drying give the pasta a rough, sauce-clinging texture.
