This artisanal pasta is produced in Abruzzo, Italy, by Pastificio Giuseppe Cocco using durum wheat semolina, bronze-die extrusion, and slow natural drying. Cavatappi (meaning “corkscrew”) are short, spiral-shaped tubes with a hollow center. Their twisted design makes them excellent for holding onto sauces, from creamy cheese-based dishes to tomato ragùs, as well as for baked casseroles and pasta salads. Their fun, bouncy texture is popular with both classic Italian cooking and more modern recipes.
