This pasta is crafted by Pastificio Giuseppe Cocco in Abruzzo, Italy, with durum wheat semolina, bronze-die extrusion, and slow drying. Fideuà is a short, thin noodle traditionally used in the Valencian dish of the same name, often described as a “paella with pasta.” The pasta is lightly toasted before being cooked with seafood, fish stock, and saffron, absorbing the flavors of the broth.
