Mancini

This pasta is part of Mancini’s artisanal line, made from durum wheat semolina grown on their own farm in the Marche region. Mista means “mixed” — it’s a rustic blend of short pasta cuts in various shapes and sizes. Traditionally, mista pasta comes from leftover trimmings of other pasta shapes, making it ideal for soups, vegetable dishes, or pasta e fagioli (pasta with beans). Mancini produces it with bronze dies and slow drying for a rough texture that clings to broth or sauce.
