Pasta Lumache Rigate

Mancini

This artisanal pasta is made by Mancini using durum wheat semolina grown directly on their family farm in the Marche region of Italy. Lumache rigate means “ridged snails” — a pasta shape with a curved, hollow form and ridged exterior. The shape is excellent for trapping chunky sauces, such as meat ragù, vegetable sauces, or creamy cheese-based preparations. Mancini uses bronze dies and slow, low-temperature drying, resulting in a rough-textured pasta that holds sauces especially well.
