This artisanal pasta is made by Mancini with durum wheat semolina grown on their family farm in the Marche region of Italy. Penne rigate are diagonally cut tubes with ridges along the surface. The ridges help sauces cling, making them one of the most versatile pasta shapes. They are excellent in baked pasta dishes, tomato-based sauces, creamy sauces, or vegetable ragùs. Mancini extrudes the pasta through bronze dies and dries it slowly at low temperatures, giving it a rough texture and superior flavor retention.
