This pasta is made in Abruzzo, Italy, by Pastificio Giuseppe Cocco using durum wheat semolina, bronze-die extrusion, and slow air-drying. Pipe rigate (often just called “pipe” or “snails”) are short, curved, hollow pasta with one end open wider than the other, resembling a snail shell. The ridged surface and hollow shape make them excellent for capturing creamy sauces, cheese-based preparations, or vegetable ragùs. Their playful form is also a favorite in baked pasta dishes.
