This pasta is made by Pastificio Giuseppe Cocco in Abruzzo, Italy, using durum wheat semolina and traditional methods. Fusilli bucati are long, corkscrew-shaped pasta with a hollow center (bucati = “pierced” or “hollow”). The twist combined with the tube shape makes them excellent for holding hearty sauces, from chunky tomato ragùs to creamy cheese or vegetable sauces. Giuseppe Cocco’s “special cut” line is bronze-die extruded and slow-dried, giving the pasta a rustic surface that enhances flavor and sauce absorption.
