This pasta is produced in Abruzzo, Italy, by Pastificio Giuseppe Cocco using durum wheat semolina, bronze-die extrusion, and slow air-drying. Radiatori (meaning “radiators”) are short, squat pasta with ridged, layered folds that resemble old-fashioned radiators. Their design creates lots of surface area, making them excellent for holding onto thick sauces, creamy cheese blends, or chunky vegetable ragùs. They also work well in baked pasta dishes and pasta salads, where their unique shape adds texture and visual appeal.
