This pasta is produced by Serafina using durum wheat semolina and bronze-die extrusion, which gives the pasta a porous, rustic surface that captures sauces beautifully. Tortiglioni are large, ridged tubes similar to rigatoni but with deeper, spiral-like ridges that wrap around the pasta. This makes them especially good at holding chunky sauces, creamy cheese blends, or meaty ragùs. They are also excellent in baked pasta dishes where sturdier shapes are preferred.
