Mancini

This artisanal pasta is made by Mancini with durum wheat semolina grown on their own farms in the Marche region. Chitarra is a traditional square-cut pasta from Abruzzo, made by pressing sheets of dough over a “chitarra” (a wooden frame strung with wires like guitar strings). The result is spaghetti-like strands with a square profile and firm bite. Its rough edges and thickness make it excellent for hearty sauces like lamb ragù, amatriciana, or simple tomato and basil. Mancini bronze-dies and slow-dries their pasta, enhancing its texture and flavor.
