This artisanal pasta is made with durum wheat semolina and fresh eggs, slowly dried to preserve its flavor and structure. Chitarrine is a specialty from the Abruzzo region, cut using a traditional wooden “chitarra” (guitar-like tool). The pasta resembles square-cut spaghetti and has a slightly thicker bite, making it ideal for hearty sauces like lamb ragù, tomato-based seafood sauces, or creamy mushroom dishes.
