This pasta is produced by Pastificio Giuseppe Cocco in Abruzzo, Italy, using durum wheat semolina, bronze-die extrusion, and slow natural drying. Rigatoni are large, ridged tubes with straight-cut edges, slightly bigger than penne but shorter than paccheri. Their broad diameter and deep ridges make them perfect for catching hearty sauces such as meaty ragùs, baked pasta dishes, or rich vegetable sauces. The artisanal production process gives them a rough surface and firm bite, enhancing flavor and sauce absorption.
