This pasta is crafted by Mancini with grano turanico (Turanici wheat), an ancient grain variety related to durum wheat, grown on their own fields in the Marche region. Sedani are short, curved tubes, similar to rigatoni but smaller, with a ridged surface that helps sauces cling. The use of Turanici wheat gives this pasta a slightly nuttier, more aromatic flavor than standard durum pasta, while maintaining a firm, al dente bite. It’s ideal for vegetable sauces, baked pasta dishes, or rich tomato ragùs.
