This is one of Mancini’s signature pastas, made with durum wheat semolina grown on their own family farm in the Marche region of Italy. Spaghetti are long, thin pasta strands, among the most iconic pasta shapes worldwide. Mancini extrudes their spaghetti through traditional bronze dies and dries it slowly at low temperatures, which gives it a rough surface that holds sauce exceptionally well. It’s versatile and pairs perfectly with tomato-based sauces, olive oil and garlic, seafood, or classics like cacio e pepe and carbonara.
