This pasta is handmade in Abruzzo, Italy, by Pastificio Giuseppe Cocco using durum wheat semolina, bronze-die extrusion, and slow drying. Orecchiette (“little ears”) are small, dome-shaped pasta with a concave center and a slightly rough surface. Their cup-like shape is excellent at holding chunky sauces, making them a traditional match for broccoli rabe, sausage, or tomato-based vegetable ragùs. As part of the “Special Cut” line, they celebrate rustic Southern Italian culinary tradition.
